  • 3 boneless skinless chicken breasts
  • 1 medium-diced white onion
  • 1 medium-diced red bell pepper
  • 5 cloves minced garlic
  • 4 cups chicken broth
  • 15 ounces can fire-roasted diced tomatoes
  • 15 ounces can tomato sauce
  • 15 ounces can black beans
  • 7 ounces can dice green chills
  • ½ cup freshly chopped cilantro
  • 2 tbsp olive oil
  • 2 tsp chili powder
  • 1 tsp paprika
  • 1 tsp ground cumin
  • ½ cup freshly chopped cilantro
  • ½ tsp salt
  • ¼ cup lime juice

For serving

  • 2 medium-diced avocados
  • 3 cups tortilla chips or strips
  • ¼ cup sour cream
  • 1 cup shredded monterey jack cheese

  • A sizeable pot
  • A large pan

Cooking method

Once you prepare all the ingredients, you just need 15 minutes to cook the soup.  

  1. Prepare the ingredients listed above
  2. Use a blender or knife to cut the vegetables and meat into pieces
  3. Put a sizable pot on the stove
  4. Add olive oil, onion, the red bell pepper and tomato
  5. Cook them for 5 minutes using a spoon to spread them evenly
  6. Five minutes later, add 5 minced garlic cloves, 1 tsp of paprika, 2 tsp of chili powder, 1 tsp of ground cumin and 5 cloves of minced garlic and cook the ingredients 
  7. Add the chicken breasts and 4 cups of chicken broth into the pot
  8. Cook for 15-20 minutes in low hit until the chicken is boiled
  9. After the chicken has finished cooking, remove it from the pot and shred it   
  10. Put the shredded chicken back into the pot
  11. Add 1 ½ cups canned corn, one 15-ounce can of tomato sauce, diced tomatoes, drained black beans and one 7-ounce can of diced green chilies
  12. Put the heat up and cook for 5 minutes and mix the ingredients
  13. Before serving, add ¼ od cup of freshly squeezed lime juice and ½ cup of freshly chopped cilantro

How to make the tortillas

  1. Put a large pan with 1 tbsp of vegetable oil on the burner and increase the temperature to medium
  2. Once it’s hot and shimmering add one corn of round tortilla to the pan and let it fry for 30 second
  3. Flip it over (add more vegetable oil as necessary)
  4. Cut the fried tortillas with a pizza cutter or knife
  5. Put the tortilla pieces into the pot with some lemon and serve
